Garlic Butter Meatballs
INGREDIENTS
1 lb. ground chicken or turkey
5 garlic cloves, minced and divided
1 egg, beaten
1/2 c. grated Parmesan, plus more for garnish
2 tbsp. freshly chopped parsley
1/4 tsp. red pepper flakes
Kosher salt
Freshly ground black pepper
2 tbsp. extra-virgin olive oil
4 tbsp. butter Or 2 tablespoons unsweetened applesauce
Juice of 1/2 a lemon
1 lb. zoodles
DIRECTIONS
In a large bowl mix together ground chicken or turkey, 2 garlic cloves, egg, Parmesan, parsley, and red pepper flakes. Season with salt and pepper then form into tablespoon sized meatballs.
In a large skillet over medium heat, heat oil and cook meatballs until golden on all sides and cooked through, 10 minutes. Transfer to a plate and wipe out skillet with a paper towel.
Melt butter in skillet then add remaining 3 garlic cloves and cook until fragrant, 1 minute. Add zoodles to skillet and toss in garlic butter then squeeze in lemon juice.
Add meatballs back and heat just until warmed through. Garnish with Parmesan to serve.

Healthy Chicken and Veggies
It's a tough job, but we are working on a Healthier Life Style -- Have healthy skin covered with our Jordan Essentials products, but so working on the eatting healthier while still tasting good. We need to eat more veggies, but my husband can be a picky veggie eatter. So when this was sent to me in one of the emails from Blue Cross and was one that actually sounded good, I've got on my meal schedule to try.

Dietitian's tip:
This recipe may also be prepared on the grill. Use heavy-duty aluminum foil and place it off to the side of the flame. Turn midway through the cooking time.

Ingredients
- 1 skinless, boneless chicken breast, about 3 ounces
- 1/2 cup diced zucchini
- 1/2 cup scrubbed and diced potato
- 1/4 cup diced onion
- 1/4 cup sliced baby carrots
- 1/4 cup sliced mushrooms
- 1/8 teaspoon garlic powder
- 1/4 teaspoon Italian seasoning or oregano
Directions
Heat oven to 350 F.
Cut off a 12-inch sheet of heavy-duty aluminum foil or parchment paper. Fold the foil or parchment paper in half, unfold and spray with cooking spray.
Center the chicken breast on the sheet. Top with zucchini, potato, onion, carrots and mushrooms. Sprinkle garlic powder and Italian seasoning on the chicken and vegetables.
Bring the foil together and make small, overlapping folds down the length of the packet to seal. Twist the two ends several times to make a tight seal so the liquid won't escape during cooking.
Place the packet on a cookie sheet and bake for 45 minutes, until chicken and vegetables are tender.
